A beautifully aged traditional-method sparkling wine from old Xarel·lo vines, offering fine, persistent bubbles and a layered bouquet of fresh pineapple, eucalyptus, and toasted cacao. Remarkably fresh yet structured, with superb balance and a long, elegant finish—an authentic expression of heritage and terroir.
Crafted from grapes grown across four distinct parcels in the village of Sant Pere de Ribes, this wine reflects a mosaic of two different soil types, with vines averaging over 50 years of age—old roots, deep character.
Each grape variety is vinified separately for the base wine, with both fermentation and aging carried out in stainless steel to preserve purity and precision. The blend is then bottled for secondary fermentation, followed by an extended 65 महीonth aging on the lees—resulting in an exquisitely fine, persistent mousse.
On the nose, it opens with vibrant freshness—pineapple and a hint of eucalyptus—layered beautifully with more evolved notes of roasted cacao and dried fruits. The aromatic harmony is striking.
On the palate, it’s remarkably fresh yet anchored by a firm structure, offering superb balance between liveliness and depth.
There’s also a touch of heritage in every glass: Marcel Sabaté’s grandfather, Josep Coca—the estate’s second-generation steward—planted Xarel·lo here in the early 1900s. The wine takes its name in his honor. Interestingly, the signature on the label reads “Jose Coca,” missing the final “p.” This reflects a historical constraint: during the Franco dictatorship, Catalan language was prohibited, and names had to be written in Spanish.
